March 4: Flash Fiction Challenge – Diet Spuds

Charli’s Carrot Ranch 99-word Flash Fiction prompt!

March 4, 2021, prompt: In 99 words (no more, no less), write a story that includes sweet potatoes. It can be part of a recipe, meal, or used as a nickname. Where do sweet potatoes take you? The grocery store? The garden? Mars? Go where the prompt leads!

Diet Spuds

Sue discovered sweet potatoes on her diet. Her slimming group leader insisted they were better for her than her usual baked spuds.

She gingerly took a knife and sliced open the elongated root vegetable to reveal the flesh’s brilliant orange hue.

Well, this would, at least, bring a little colour to her dull meals.

A sweetness lingered in the air.

She ground a little pepper and added a pinch of salt.

The usual knob of butter called to her from the butter dish, but she ignored it, added a little low-calorie cheese, and took a tentative bite.

Not bad.

If you enjoy mashed potatoes but want a healthier version that is also a little bit on the sweet side, you can add some coconut to it. You will start with sweet potatoes instead of white potatoes, which are more nutritious and contain lower carbohydrates than white potatoes.

You will blend them with some coconut milk as an alternative to regular milk, and add some other seasonings as well. Recommended seasonings include vanilla bean, unsalted butter, brown sugar, and ground cinnamon.

My Weight Watcher group told me to eat sweet potatoes. They’re alright, but like everything… I gain weight from the starch in the vegetable! Now, I only have them once in awhile as a treat. Your’s sounded delish! ❤

If I can have sweet potato fries instead of regular fries at a restaurant, I get them. So good. I need to experiment with other ways of cooking them at home.

When we were in New Zealand, the restaurants all served friend sweet potato chips instead of normal potatoes. I must admit, I am not really a fan although they were better fried with salt.

Ritu, good discovery. We are trying to do low carbs, but love our white potatoes. The sweet potato is a nicer way to go at it. Keith
