Day 12 of#musicalmarch🎵!

Again going back to the 90’s for my Western song today!

Mark Morrison and Return of The Mack! I remember seeing him going into a club, while I was at university, a tiny figure wrapped up in this HUGE full length fur coat.. totally pimping it! He was jailed for some reason or another shortly after!

And this Bhangra number is a song that we like to sing to my Lil Princess when she is having tantrums of epic proportions… oh and Hubby Dearest has been known to sing it to me on occasion… don’t know why he would do that… ;P Drama Queen by Bups Sagoo

Synfully Delightful Oreo Cheesecake!

Ok, so I promised a recipe this weekend, that was not one of my healthy dishes…

My kids both love Oreo cookies, and after sampling the Oreo Thins, I wanted to use them to make something, or at least decorate something, so I went on the hunt for a recipe, and this is what I found, and subsequently, made.

Oreo Cheesecake

Ingredients for Base

300g Original Oreo Cookies
140 g butter, melted and cooled slightly

Cheesecake topping

500g room temperature full-fat cream cheese or mascarpone
300ml double cream
85g icing sugar
1 tsp Vanilla Extract
1 pack (14 cookies) Original Oreos crushed into small pieces

Decoration

1 pack Oreo Thins or Mini Oreos
250ml whipping cream

Method

  • For the base, melt butter. Blitz the Oreo cookies to a fine crumb. Add the melted butter and combine well. Tip crumb into a 23cm springform cake tin and press down firmly. Ensure the top is smooth then place in the fridge to chill while making the filling.

  • For the filling, beat together the cream cheese and icing sugar until softened. Whisk the cream and vanilla in another bowl until soft peaks form. Fold cream into the cheese mix. Take the crushed Oreos and fold into the mixture.20170310_102540
  • Spoon over the base, smooth on top, cover and refrigerate for around 6 hours, or overnight.

  • Before serving, whip cream to pipe on top, and decorate with additional Oreo Thins.

#SoCS Mar. 11/17 – Short

Your Friday prompt for Stream of Consciousness Saturday is: “short.” Use it any way you’d like. Enjoy!

My fuse was way too short yesterday.

Considering I have been at home for 2 weeks, I should be pretty relaxed, shouldn’t I?

And given the fact that my Hubby Dearest was picking up my new car too, that should have injected an airy and light bounce in my step, shouldn’t it?

But no, I ended up with a headache that threatened me from 3 pm, and it just grew and grew. I tried to fight it, but it was beating me, And it meant that I was in no frame of mind to deal with kids and their moodiness.

Everything Lil Man did was designed to frustrate, and usually, I can deal with it, but today, I just found myself taking the bait, and getting angry.

Hubby arrived with the car and we went for a spin, which was great, but Lil Man was just doing silly things, winding his sister up and all sorts, which got me even more agitated!

Still, no matter about my short fuse, lit by a short guy. My anger only lasts a short while!

I got a new car, yay!!!!!

Dear You,
Sitting here, watching the sun slowly set, I feel a sense of peace finally come over me.
It’s been tough these last few weeks. I wasn’t able to get away from anyone. I know they were being considerate, not wanting to leave me alone for even one minute, but still, sometimes you need a little solitude you know, to really put things into perspective.
This was where we always came, wasn’t it, when we wanted some time together, alone? In times of sadness, happiness, lust, and anger, we rushed here, mostly together, but sometimes we’d be hot on the tails of the other.
This view, this horizon, it’s seen a lot of our life played out, and in the end, it even bore witness to our last moments.
Who knew that final drive to our favourite spot would be our last? That, holding my hand, you’d take your final breath?
They didn’t want me to come here, but no one seems to understand that this is where I feel whole. Just sitting on the sand, staring out into the horizon,  I know you’re here with me.
Be happy, wherever you are.
I’ll come here often, to feel you near me. I’ll scatter your ashes here, so I know your final resting place will be where your heart always was. And I can only hope that when my time comes, they’ll bring me here too, so we can finally be one again.

Ritu’s Healthy Eating Week 31 – #icandothis

Hey all! I am back with another dose of food pictures and an update in the healthy eating life of Moi!

I have been at home again all week due to the whiplash, and that has resulted in me cooking all my meals properly at home, but the downside? I have ended up being a little naughty too. Snacking is far too easy when you are home, and there are naughty things to choose from as well! Chocolate covered rice cakes are okay if you have one or two, but not a whole packet! The same goes for the McVitites Thin Digestives! And if you have scones, or hot cross buns at home, well then, excuse my French, but you’re b*ggered!

Still, here is the good stuff I ate!

Oh, and we were finally able to cut Lil Princess’s cake, 2 weeks late, thanks to my accident, but better late than never!

And as usual, Friday morning and the scales beckoned.

1.5lb on.

But, I am not too worried! I over reached on my target last week, and this week I am actually at the target weight I set myself, so I am totally happy with that!

Still feeling achy, but not as tired this week. Exercise, apart from the gentle stretches I have to do, is still not on the cards, but I will slowly get back into it!
