One Liner Wednesday – #1LinerWeds – Creative Tiredness

“When you let your imagination run away with you, be prepared for the mental exhaustion.” – Ritu

For Linda’s #1LinerWeds challenge.

That was my one line, here’s my explanation:

The last month has seen me write over 50,000 words. I have never written so much in such a short space of time!

And while I wrote, my brain, my imagination went wild. I created this amazing (to me!) story.

Then I had to stop.

All that thinking and writing drained me!

I’m back to school on Monday, and the way I feel at the moment, if I don’t take a step back, I’ll be more tired than I was before the six-week break!

My story is still not finished, But will see its end, sooner rather than later.

But I’m taking advice from my brain now, to step back for a little while to allow my creative self to get her second wind, before charging on again!

Cottage Cheese Pancakes #Recipe

Cottage Cheese Pancakes

I love pancakes. You already know that. I shared that information yesterday morning!

And in my quest to be healthy, I have tried a few recipes, including Banana Pancakes – recipe here – and Quark Pancakes – recipe here – and more recently, Oat Pancakes – recipe here – and I am always on the search for more!

This week I tried pancakes with cottage cheese – really!!

They were pretty good, you know!

Cottage Cheese pancakes

  • Ingredients

    • 1/2cup cottage cheese
    • 1/2cup rolled oats
    • 3 eggs

     

    Instructions

    1. Put in all the ingredients into a blender and mix until smooth.
    2. Fry in a pan with a little oil or butter on low to medium heat.
    3. Flip with a spatula once bubbles start to appear. Cook until both sides are golden brown.

I served with bacon, and agave nectar!

Duh, an otter. Why? Well, they play constantly, they’re hyper-active, and they love to, ahem, make love. Also, otter’s are my wife’s favorite creatures. So, yeah.

Oat And Blueberry Pancakes #Recipe

Oat and Blueberry pancakes

I love pancakes.

And in my quest to be healthy, I have tried a few recipes, including Banana Pancakes – recipe here – and Quark Pancakes – recipe here – and I am always on the search for more!

This week I tried pancakes with oats in too!

And they were delicious! So god, I couldn’t not share the recipe with you!

Oat and blueberry pancakes

INGREDIENTS

  • 1/2 cup gluten free rolled oats
  • 1/2 teaspoon baking powder
  • 1 pot vanilla yogurt
  • 1/2 medium ripe banana
  • 1 egg
  • 1/2 teaspoon vanilla essence
  • 1/3 cup fresh blueberries, plus more for serving

INSTRUCTIONS

  1. Place all ingredients except fresh blueberries into a blender; blend until smooth.
  2. Set batter aside to thicken up for a few minutes. If batter is too thin, add a tablespoon or two more of oats and blend again.
  3. Lightly coat a large pan with butter or cooking spray and heat over medium low heat.
  4. Drop batter by 1/4 cup into pan.
  5. Add a few blueberries on top.
  6. Cook until bubbles appear on top.
  7. Flip cakes and cook until golden brown on underside.
  8. Wipe pan clean and repeat with more cooking spray and remaining batter.
  9. Makes 4 pancakes.

I served with fresh blueberries, agave nectar and a sprinkling of cinnamon!
